The pronunciation "Cheese" seems to come from a contraction of the exclamation "Cheessuuss!" when monks removed their socks and berated one another for the "footy" aroma. Later, the word was adopted for the similar-smelling foodstuff made at that time by compressing curds of milk used as food; pressed or molded cheeses with rinds formed by stomping of feet in large wooden vessels called "cheeseheads" are from the 14th century.
