I have three choices of things to make and I can't decide. What would you choose of the following:
A) chicken curry
B) chicken stir fry
C) creamy chili soup w/ crab

Oh, doll, chicken stir fry is pretty close to whatever they serve in heaven! But how's about oven-fried chicken?
You want half a boneless chicken breast per person. Cut those up into one and a half inch cubes. Crush two cupsful of cornflakes by putting them between two layers of wax paper and rolling 'em out fine with a rolling pin. Put that in a bowl and stir in a teaspoonful of dry Italian seasoning.
Spray the chicken cubes with spray margerine or dip 'em in whole milk. Then roll 'em in the cornflake/seasoning mix and put 'em into an oven-safe casserole dish or cookie sheet - don't layer them but put them side-by-side. Spray 'em again with spray margerine and then sprinkle liberally with the leftover cornflake/seasoning mix. Bake in a preheated oven at 325 degrees for forty-five minutes. Test at that point to be sure they're done. Serve with a green veggie and rice, potatoes or corn on the cob. Nice summer meal and easy to prepare.

I don't know if the weather is hot where you are..but it is here, therefore I'd pick the easiest and quickest one to get away from the stove... Chicken stir fry.
