I am the tournament director of just such a charitable fundraising hold'em tournament.

Any organization that has 501(c)(3) status can apply to the state for the right to hold such a tournament. They will likely require that prizes are items. The tournament can not be for cash in any state where gambling is outlawed.

The item prizes suit a fundraiser however. Donations of prizes of value help the tournament attract entrants, and then help you to keep more of the gross revenues from the tournament.

Hotels will lease ballrooms at non-profit rates if you make it clear that the purpose is fundraising. You can subcontract companies that provide dealer training (per the legal requirement), tables, and chips.

First of all since there is going to be gambling involved you may want to check with you state's gambling policy even if it is for a non profit org., some troubles may arise when setting it up. I would find someone who organized a tournament in the past even if it was just a regular tourney talk to them and to find out where to start. Ask them what went well and what didn't so you can get an idea of how you are going to do it. Talk to friends and family, they may know someone who's done this sort of thing before or went to one and listen to their opinions. Is it going to be a big gala in support of a cause or just a local charity event? That will help determine how much supplies and how many hands you'll need. Get some friends or volunteers to help you. As it gets closer to crunch time, you'll have a lot on your plate and the more help the better. Just stay on top of things and set timelines for every stage of the project with clear deadlines so that everyone is on the same page, and when it comes together, I'm sure it'll be a big hit and jackpot for your organization. An alumni group I am affiliated with tried to do one here in Maryland only to find out that they are not icnluded in casino night fundraisers. They are not allowed apparently. Check with your state first before doing anymore set up work.
