Um, I'm not sure what your question is really asking. Why don't we not learn? You mean, why do not we not learn? Or do you mean why do we not learn?
Anyway, I'll answer it both ways. Why don't we not learn? Well, we do learn because it's important to learn. If we didn't, then where would we be? If we didn't learn, we wouldn't have technology, we'd make the same mistakes, we'd burn ourselves on a fire and do it again. Thinking requires us to learn, becaues our thoughts are based upon that which we have learned. If we haven't learned, then we can't think. When I didn't know that 1+1=2, I couldn't think about it. When I didn't learn the ABCs, I couldn't think about spelling or writing or anything. Before I learned about the American Revolution, I couldn't think about it. So, thinking requires us to learn, and learning enables us to think. It's very important that we do both, or we'll never advance.
Now, let's assume your question meant "Why do we not learn?" Okay, some may argue that we don't learn, but we do learn. We learn from our mistakes. It's just a matter of us sitting down and thinking before we act. I can learn all I want, if I don't think before acting, all that learning does me no good. Again, both thinking and learning are required and important.
