You would def need a country by country map. Imagine the map you´re asking for but fo the US. It would be impossible...
For traveling, I would suggest buying the Lonely Planet books. They´re pretty good, have lots of info, and may have one for South America in general.

Remember that South America is huge!

You may have to do it country by country. Good travel maps are usually sold at all major book stores (many include the local public transportation). Once you have a good map for each country, just locate and highlight the hostel locations on each map using this site as a reference:

The best site I have found so far for Hostel and travel information is http://www.hihostels.com/. You will have to do it country by country, but it's fast to check up on any country. Always check a countries visitor's website in order to find out about regulations (ie. health checkups) before you travel anywhere.
