all the recipes I have tried come out runny although they taste good.

This is a great and simple alfredo recipe that makes a thick sauce:

Easy Alfredo Sauce

Ready In: 15 Minutes
Yields: 8 servings


INGREDIENTS:
1 pint heavy whipping cream
1/2 cup butter 1 1/2 cups grated Parmesan
cheese

DIRECTIONS:
1. In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese. Cook over medium low heat until smooth. Remove from heat. Sauce will thicken upon standing.

Alfredo Sauce

1/4 cup butter
1 cup Parmesan cheese, grated
1/2 cup heavy cream
Garlic (I use 2-3 cloves, you don't want too much!)
1/2 to 3/4 cup Mushrooms

Sauté the mushrooms and garlic in some of the butter. Melt the rest of the butter, and remove from heat. Stir in the cheese and the cream, as well as the mushrooms and garlic if appropriate, and bring it just to a boil over low heat, stirring often. Toss with warm noodles and serve.

Okay here goes: You will need
2 tbsp. butter
7/8 cup heavy cream
1 lb. of fettuccine
1 tbsp olive oil
1 cup of FRESHLY grated Parmesan cheese, pls. extra to serve
salt and pepper for taste...hope this receipe works for you...i get compliments all the time on this recipe so let me know how it works out...the rest of this follows.

Put the butter and 5/8 of the heavy cream in a saucepan and bring the mixture to a boil over medium heat...Reduce and simmer gently for about a 1 1/2 minutes or till slightly thickened..

Meanwhile, bring a large saucepan of lightly salted water to a boil...add the fettuccine and the olive oil and cook until tender but still firm to the bite...Drain and then pour the cream and butter sauce over the top...

Toss the fettuccine in the sauce over a low heat until thoroughly coated...

Add the remaining heavy cream, the Parmesan cheese all to the fettuccine mixture then add salt and pepper to taste....toss thoroughly to coat while heating through...

Serve immediately, topped with extra Parmesan cheese...
*feel free to add a bit more Parm cheese to the final mixture for a little extra flavor...it comes out sooooo good....

Something I usually make with pasta tossed with steamed veggies.

1/4 cup butter or margarine
3 tablespoons flour
8 ounces cream cheese
2 cups milk (for a thinner sauce, add up to one extra cup)
1/2 cup grated parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon salt

In a large saucepan over low heat, melt butter. Slowly stir in flour, one tablespoon at a time, whisking after each addition.
Add cream cheese in pieces and stir in milk slowly. Stir til melted.
Stir in garlic and salt and sprinkle in parmesan cheese, while stirring to combine.
Stir until thickened over low heat. remove and serve over pasta.

I'm sure you have a recipe already so I'll just put in my two cents. I would think, that it has a lot to do with the amount and quality of the cheese you use. So try more cheese from a high quality delicatessen or something

I'd just buy some - digornio sells a good thick one, and it's often on sale for $2.50 for a small tub of it. By the time you buy the ingredients to make it, I am sure you would pay 2.50

Reduced cream with butter and parmesean/romano cheese
However some people start with a rue of butter and flour then they add milk/chicken stock (can be a lower fat version of the traditional then they add the cheese)

Just melt Brie cheese over noodles, throw in a little garlic and some cut up chicken. Mmmm.....
