I think Trek and Specialized are the two best carbon bikes between $1500-$5000. The Trek Madone SL is an awesome, lightweight and stiff bike, and hey you don't win 7 Tour De France in a row by luck. The Specialized Tarmac is a new stiff design that is also very nice. Both these USA companies have lifetime frame warranties.
If you want something less expensive try a scattante cfr from performance bike.com, they are made by pacific cycles in asia, kind of cheap but good value for components and weight. Basic and maybe too poorly made are the motobecane options from bikesdirect.com

There are a lot of good brands out there that do carbon well. Trek, Specialized, Giant are really the big guys. Hard to buy a bad bike with one of those fellas. I think Giant has the cheapest carbon bike, tho really you're looking at spending probably 2000+ on a good carbon bike.
Go to a shop and ride them. Best advice I could give. Also find a shop that will fit you to a bike professionally. Fit is super important on a bike, much more so than what material it's made out of.

The Specialized Tarmac is pretty good, so is Orbea Onix (a 16 lb. bike for $2500 is unheard of). For bang for the buck, they'd be my recommendations. Isaac, Cervelo, Kuota, Storck, DeRosa, Merckx, Pinarello, BMC, Look, Merlin (yes, Merlin has carbon bikes) and more all claim to make the best.

For carbon, some of the better brands are Trek, Cervelo, and Specialized... If you want to race, then you will want to spend between 6000 and 10,000 for one of the best. Otherwise, 3 to 5 thousand is good.

Just check around the bike shoppes in your area and they'll help you out. Get a good one and not a cheapie from walmart or something like that..You want quality, you'll pay for what you get.
