Caramel Icing Recipe
Goes great on orange cake!
2 cups brown sugar
1 cup white sugar
1 tablespoon white syrup
1 cup cream
1 teaspoon vanilla
Cook together all ingredients except vanilla until mixture forms soft ball when dropped into cold water.
Add vanilla and stir until desired consistency to spread.

Orange Filling
1/2 cup granulated sugar
2 tablespoons cornstarch
1 1/2 teaspoons grated orange peel
1/4 teaspoon salt
3/4 cup orange juice
1/4 cup water
2 large egg yolks
2 tablespoons butter
Combine sugar, cornstarch, orange rind and salt in heavy saucepan. Gradually blend in orange juice, water and beaten egg yolks. Cook over medium heat, stirring constantly until mixture thickens. Cook for three minutes. Remove from heat and stir in butter. Cool before spreading between layers.
Orange Buttercream Frosting
6 tablespoons butter
4 1/2 cups sifted powdered sugar
1 tablespoon grated orange peel
Pinch of salt
4 to 6 tablespoons orange juice
In small deep bowl, cream butter, powdered sugar, orange rind, salt and enough orange juice until desired spreading consistency. Spread onto the sides and top of cake.

Raspberry Cream Cheese. Take a can of store bought cream cheese frosting. Blend it with some Rasberry juice for color.
Ice the cake and then trim with fresh raspeberries. It's pretty and very tangy.

1 large container of cool whip
1 small can crushed pinappple juice and all
1 package of vanilla instant pudding (4 serving)
Dump in bowl, beat with electric beaters about 3-4 minutes or til mixed and set. Spread on cooled cake.

Vanilla. Think orange creamsicle.
For a not so sugary and grainy taste, you can also add one small package of instant vanilla pudding to a tub of whipped cream. Lighter texture, but very good!
