I enjoy Calamari... the fresher the better.

clean the squid inside and out
slice it all up into rings (except for the tentacles -- cut them into segments).
coat with salt, pepper, and lemon juice
dip into a batter of eggs and flour
dip into a dry batter (bread crumbs or seasoned flour)
deep fat fry in canola oil (350) for a couple minutes
drain on paper towels
dip in favorite condiments, and enjoy with a cold beverage (I like San Mig Lite)

my family loves deviled eggs. I usually cook up 2 eggs per guest.

bring water to boil in a large sauce pan, only filled about 3/4 way up the side. put in a cap of vinegar. place eggs into water, I use a pasta spoon for this, and let them boil for 10-12 minutes. then put them in a cold water bath to stop the cooking. don't crack until they are cooled or the shell may stick. slice long ways and pop the yolk into a bowl, place the whites onto a platter. mix in mircle whip or mayo if you preffer, a small chopped onion, 3 cloves of garlic minced fine, 1 tsp of lemon pepper, 1 tsp of sweet paprika. combine until smooth. scoup yolk mix into the white halves and top with a small pinch of oregano and sweet paprika. half of my family like them room temp and the other half like them chilled so I usually have 2 platters. red and blue and if they can't get it from there they're out of luck lol. enjoy

Mushroom Appetizers Recipe

A great appetizer, tasty. A nice blend of flavors You may make the mushroom fill ahead and freeze it. I usually split it into 4 bags so I can make only a dozen at a time. Thaw from frozen and continue to make the bread nappies.

3 tablespoons butter
1 cup sweet onions, chopped fine
2 cups mushrooms, chopped finely
1 cup mozzarella cheese, grated
1/4 cup parmesan cheese
1 teaspoon parsley flakes
1 large egg, beaten
1/2 teaspoon oregano
salt & pepper
12 slices square bread, crusts removed (white or whole wheat, I prefer the whole wheat)
1/3 cup butter, softened
3 slices Kraft processed cheese slices

Melt butter in a large fry pan and add the onions and mushrooms, Saute until soft.
Add Mozzarella, parmesan, parsley, egg,salt& pepper, cook for 1 minute and remove from heat.
Roll each crustless slice of bread to flatten it, butter each piece and cut each slice into 4 square pieces.
Press bread pieces, the buttered side down, into a tiny muffin tins.
Fill with mushroom mixture (about 1 1/2 tsp to each tartlet).
Cut the 3 cheese slices into 16 pieces so you will have 48 pieces and put a piece on top of each tartlet.
Bake in 350f oven for 20 to 25 minutes

Salsa (chop all ingredients in a food processor)
5 - tomato's - sliced and remove seads
1 crushed clove of garlic
1/4 - onion
1 - green pepper
2 - tsp cilantro
2 - jalapeno peppers
1/2 tsp sugar
salt to taste

Let sit over night for best flavor

I was going to type Sausage Balls but Lisa beat me to it. She makes hers the exact same way I do. They are delicious, put a little spicy mustard on the side.

I make little meatballs out of nothing but ground beef. Fry them up and add a good BBQ Sauce. Everyone always ask what is in them and theres nothing but meat...lol. I use Bulls Eye BBQ. That's my favorite.

I like sausage balls. True sausage balls, not bread balls with sausage in it, like most recipes. I don't do exact measurements, but I start with sausage, add some Bisquick, and cheddar cheese. I use just enough of the Bisquick to help keep everything together. I roll them into balls, place on a cookie sheet, and cook on 375 degrees until sausage balls are almost crunchy on the outside.

get aloaf of bread flatten slices with a rolling pin butter and squash into a muffin pan cook until crisp.
make a cream cheese sauce add corn,asparagus,ham to the cheede sauce put into cases .lovely.

spinach dip
2 10 oz boxes frozen chopped spinach ( thawed and drained well)
2 cups mayonaisse
1/2 cup each chopped parsley ( flat leaf or curly) and scallions
salt and pepper to taste
serve in pumpernickel bread bowl- use leftovers for spread on sandwiches

homemade cheese logs....
2 pkg cream cheese ... room temp
1/2 lb bacon..fried well
horseradish..to taste
1/2 c sour cream
chives

mix first 4 ingredients together.. add more sour cram if to thick.. usin wax paper roll into a log... chill well[overnight is best] jus befer servin roll log with chives to coat... slice an serve on any buttery cracker......
