Placebo effect, you think it's better, so you believe it tastes better. The water in the bottle most likely came straight from the pipe somewhere else.

In many cases, minerals aren't removed from bottled water...they are added.
The water that you buy in bottles is generally filtered, then minerals are added to give it a clean, crisp taste. People with sensitive taste can tell tyhe difference immediately, especially if you live in an area with poor quality tap water.
It's not in your head, bottled water does taste better.

water from the pipe is full of chemicals, heavy metals and pollutants, especially chlorine. depending on where you live it will vary but most municipal water tastes and smells bad these days.

Probably because when you buy it it's ice cold. That tends to make it taste better.
