I want one that is primarily eggs -- but also has bacon and/or sausage in it? (Ideally - a recipe that I could do 2 ways -- one casserole done with bacon and one casserole done with sausage. Large enough to fit in a good-sized casserole dish and will feed a group of people for breakfast/brunch.)

Bacon and Egg Casserole

This easy breakfast casserole recipe is prepared the night before.

INGREDIENTS:
4 slices white bread, crusts removed
4 eggs, slightly beaten
1/2 cups milk
1 teaspoon dry mustard
1/2 teaspoon dried minced onion
8 slices bacon, cooked and crumbled
1 cup (4 ounces) shredded mild Cheddar cheese

PREPARATION:
Place bread in a lightly greased 8-inch square baking dish; set aside. Combine eggs, milk, dry mustard, and dried minced onion; pour over bread. Sprinkle bacon over casserole; cover and refrigerate 8 hours. Remove from refrigerator; let casserole stand 30 minutes. Bake, covered, at 350° for 20 minutes. Uncover, sprinkle with shredded Cheddar cheese, and bake an additional 5 minutes. Let breakfast casserole stand 5 to 10 minutes before serving.

Breakfast bacon and egg casserole serves 4.

Double or triple as needed - use proper size pan. You can also sub sausage.

Breakfast Casserole #1

1 lb. fried bacon
2 Tablespoons sugar
2 cups biscuit mix
4 to 5 eggs
3 cups sliced apples
2 cups shredded cheese
2 cups milk

Mix apples and sugar. Put in 9 X 13 inch pan in rows. Cover apples with shredded cheese and sprinkle with crumbled bacon. Beat the remaining ingredients together. Pour evenly over the apples, cheese, and bacon. Bake at 375 for 30 to 35 minutes or until brown. Makes 12 servings.




Breakfast Casserole #2

1-1/2 pounds sausage 6 slices bread, cubed
1-1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced

Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.

2 tablespoons butter
1/8 teaspoon pepper
2 tablespoons flour
2 cups milk
12 eggs
1 lb bacon, chopped
1 cup shredded cheddar cheese
1/4 cup onions, chopped
1 can mushroom stems and pieces
1 1/2 cups soft breadcrumbs
3 tablespoons melted butter
1/8 teaspoon paprika

8-12 servings

melt butter.
blend in flour and pepper.
gradually add milk and stir until thickened.
add cheese, mix and set aside.
fry bacon and onions until browned.
add eggs and scramble just until set.
add mushrooms and cheese sauce and put into a greased baking dish (9x13).
mix breadcrumbs with 3-tblsp.
melted butter and paprika and sprinkle over egg mixture.
CHILL for 30-minutes at least OR put in fridge overnight.
to serve bake for 30-minutes in a 350 degree F oven


Sausage Casserole Recipe

This is so easy to put together. Sometimes I halve the ingredients and use an 8x8 dish. It can be made the night before and popped into the oven the next morning. (I let it sit out 30 minutes before baking).

6 slices bread
2 lbs bulk sausage
1 (8 ounce) can mushrooms, drained
16 ounces grated sharp cheddar cheese
6 eggs
2 cups light cream or milk


Tear bread into small pieces and put into lightly greased 9 x 13 casserole dish.
Cook and crumble sausage.
Drain sausage and place over bread.
Layer mushrooms and then grated cheese evenly over sausage.
Beat eggs,add light cream and mix well.
Pour egg mixture over casserole.
Bake uncovered at 350* for 30 to 45 minutes.

Breakfast Casserole

1 lb pork sausage
1 c shredded mozzarella cheese
1 c shredded cheddar cheese
8 oz can refrigerated crescent dinner rolls
5 eggs, beaten
3/4 c milk
1/4 tsp salt
1/4 tsp pepper

Preheat oven to 325. Crumble and cook sauage in a medium skillet over medium heat until brown. Drain. Line bottom of greased 9x13 inch baking dish w/ crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients of eggs, milk, salt, and pepper in a medium bowl until blended; pour over sausage. Bake 25 min or until set. Let stand 5 minutes before cutting into squares; serve hot.

*Just in case you have a vegetarian on hand try this:

Spinach-Cheese Breakfast Squares

4 T butter
3 eggs
1 c flour
1/2 tsp salt
1 tsp baking powder
1 c milk
16 oz grated sharp cheddar cheese
2 (10 oz) pkgs of frozen spinach
1 sm onion chopped and sauteed (optional)

Thaw spinach and drain well. Preheat oven to 350. Melt butter in a 9x13 inch baking dish in the oven. Meanwhile, in a large mixing bowl, beat eggs with flour, salt and baking powder. Stir in the milk. Add cheese, spinach and onion. Spread mixture evenly into the baking dish. Bake 25 minutes or until golden and set in center. Cool and cut into squares. Can be served warm or reheated. Serves 8 - 10.

Eggs Benedict

12 slices ham
12 slices swiss cheese
12 eggs
1 cup heavy whipping cream
1/3 cup grated parmesan cheese
12 servings

1. Fold ham slices in half; set side by side in a 9x13 pan.
2. Fold swiss slices in half, layering on top of the ham to form a"nest".
3. Break eggs over the swiss.
4. I usually break the yoke after it's in the pan so there's not a large clump of yoke.
5. Pour cream over the eggs.
6. Sprinkle with parmesan cheese.
7. Bake uncovered for 20-25 minutes at 375 or until eggs reach desired doneness.
8. Let stand for 5 minutes.
9. Is usually served with English muffins but we're watching our carbs!

oven baked omlette......
1 lb bacon .. cut in bite size pieces
8 oz mushrooms..sliced
1 lg onion..chopped
1 green bell pepper.. chopped
2 med potatoes.. shredded
8 lg eggs
1/2 lb sharp cheese..shredded
1 T chives
salt an pepper.. to taste

fry bacon well... drain on paper towels... to pan add onions, peppers, and potatoes fry 5-6 min then add mushrooms...cook 5-6 min more... turn off heat add bacon cool.... beat eggs, salt pepper an chives... spray a 2 qt bakin pan with cookin spray add bacon/veggies mix..add cheese an stir well pour eggs into dish.. if not covered add small amount of milk an stir in... bake at 350 til knife near middle comes out clean... 30-45 min.. check at earliest time.. try not to overbake or gets rubbery.... serve with biscuts an honey and tall glass of cranberry juice....
