As Spanish is not a foreign language to me... I won't mention it.
The most intersting to learn? all of them. All the 6000 this world has. Each of them shows reality in a particular way. Each of them is tightly related to the culture of people who speaks them. Each is a window to a different point of view of this world.
The most useful to learn? for me, it was English, of course. But I am learning more language that will become at least as useful as English due to my future perspectives. It all depends on how you want to take advantage of being able to speak another language. Many people live happily only knowing their native. But there are others.. as mad as me.. that will try to do something useful with languages.

You've acquired some very good answers.
From my point of view I begin with the end of WWII when the USA emerged as the major economic world entity. The issues confronting the governments of Europe were the investments and politics of post-war reconstruction. English was the most favorable language at the time because Europe tied its monetary value system to the American Dollar. This fact has remained to this day although we have reached a point in time where Europe, Asia and India have emerged as powerful players.
The facts are that Asia, India, Russia and Europe have consolidated their economies to limited capitalism ... and in order to profit from the world markets they have rapidly adapted for their needs in the 21st century.
There is no doubt that millions of Asians, Hindu, and Europeans are flocking to assililate English into their economies; Therefore, I must insist that "ENGLISH" is the language of growth and the most sought after, useful foreign language on the planet for now.

All foreign languages are interesting, and many are very useful. It all depends on what you want to use it for. English and French are the official languages of the United Nations and are therefore very useful for diplomacy. Futhermore, there are French speakers all over the world, especially in Africa.

Chinese is also a useful language because of China's size and importance in the world economy.

Japanese is useful in you are interested in techology.

Languages such as Arabic, Spanish, and Hindi are useful because they have a very large number of speakers.

Personally, I speak or am trying to learn French, Spanish, and Arabic, in addition to English obviously. All are very interesting, easy to learn, and I have generally not been at a loss to find people to communicate with in these languages.

Have fun,
Anna

I would say if you are in the U.S. then the spanish language would be the most useful, it is being used very frequently now in a lot of public venues. There are many job openings for people who know both English and Spanish.

You also would have numerous choices of places to visit where the language is spoken. Your choices will take you to several continents.

I've had the most fun learning Japanese. It is really fun being able to say phrases in Japanese! They also have lots of funny words with English origins. And it is kinda impressive to other people if you know it, especially if you can read or write something in it.
Give it a try.
