This is embarrassing... but the most trouble is have cooking something is a simple egg, fried "Over Easy".

For about a year, I've noticed that eggs don't "fry right"... it's like the protein matrix is weak or something because I've noticed I can have an egg frying perfectly... looks like a picture from a magazine... and then, suddenly and without warning, the yolk breaks WITHOUT MY TOUCHING IT.

I've talked to the Produce manager at the Supermarket and he's noticed the same thing. His explanation is, it's in the feed they are using in chicken farms (or, more exactly, in "Egg Factories". That may be, but I have the same problem when I use the really expensive 'eco-sensitive' eggs, so it may be something I'm doing, but I can't figure it out because I still fry eggs the same way I have fried them for years.

I have an IR remote reading thermometer and have even used it to give me an exact range of temperatures to try to find a specific temp. I can use to keep the yolk in one piece.

I am a disaster waiting to happen. I have trouble cooking the most simple things without some stupid or unusual disaster happening.

Chicken. I don't guess I really have trouble with this, it just always scares the crap out of me that I am not going to cook it to the right temp. don't want to make anybody sick or anything.

Fried chicken is the one I have trouble getting right all the time and I also have a hard time making homemade gravies.

Meat. I can never get it right. It always dries out in the oven or burns on the grill. If I try to broil a steak it always turns weird grey-ish-brown. I can stir fry chicken but that's about it. *sigh*

Biscuits. UGH. If you give me a recipe, I can make anything (and it turns out!) I can NOT make biscuits to save my life though. I've tried every recipe imaginable...with buttermilk, without buttermilk, white flour, whole wheat flour, etc. I don't know what's wrong...they're not burnt or anything, and they are edible (good flavor) but they never get tall enough. I want to make biscuits like they have at KFC or McDonald's!!

Beef for other people. I can't stand when people want meat raw inside. Its nasty so of course I try to cook ever so slightly to make people happy. It doesn't always happen.
