They use tomatillos instead of tomatoes as the base of the salsa. Cilantro or green chilis also contribute to the green color. Here is a good recipe for Salsa Verde:

1 1/2 lb tomatillos
1/2 cup chopped white onion
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
1/4 teaspoon sugar
2 Jalapeño peppers, stemmed, seeded and chopped
Salt to taste

1 Remove papery husks from tomatillos and rinse well. Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.

2 Place tomatillos, lime juice, onions, cilantro, Jalapeño peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.

Here is one recipe, but the amounts of each ingredient varies according to who is making it. Many also use lime juice instead of at least part of the water, and at least double the amount of jalapenos.


*4 cups tomatillas, husked and rinsed
*1 onion, chopped
*4 cloves garlic
*1/2 cup chopped cilantro leaves
*2 small jalapeno peppers, chopped
*1 tsp. salt
*1/3 cup extra virgin olive oil
*1/3 cup water

Cut tomatillos into quarters. In a blender or food processor, place tomatillos, onion, garlic, cilantro, jalapeno peppers, salt, 2 tablespoons olive oil, and water: process until slightly chunky.

In medium saucepan over medium heat, heat remaining olive oil.

Add tomatillo mixture and simmer for 10 to 12 minutes, stirring frequently, until thickened. Remove from heat and pour into serving bowl. Cover and let stand 1-2 hours to blend flavors. Serve warm or cold.
