fresh Yeast - limited shelf life, impossible to find although apparenlty some health food shops stock it. Should be wrapped and stored in a cool place but used as soon as possible after purchase. Can be frozen but defrost for 30 minutes before using.

I buy bread machine yeast in large quantities and freeze it all the time and don't have a problem with it. IF it is stored in an air tight baggie, there shouldn't be an issue.

I have frozen dry yeast for years. It doen't hurt it at all, but as with any yeast, proof it first berfore wasting the other ingredients! Don't know if this works with cake yeast...Gayle

I guess so. Yeast does not die on freezing. it just stops growing so when you defrost it is starts growing agaon.
