Coils are generally placed in the suction side of the fan of an AHU. So, in the absense of a trap, air will be sucked into the AHU instead of water flowing out. The difference between the two legs of a P trap, if equals the static pressure of the fan, water won't be lifted and you can ensure water flow out and also restrict air flowing in.

It's a moisture trap. Being heavier than air, any water is held in the trap.
