Chinese Chicken Pasta Salad

Ingredients:

1-2 cup shredded cooked chicken -breast bone; (1 pound)
2-2 cup cooked radiatore (short fat rippled pasta) cooked without salt or fat
3-1 1/2 cup diagonally sliced fresh snow - peas; (1/2-inch)
4-1/2 cup diced red bell pepper
5-1/4 cup sliced green onions
6-8 oz sliced water chestnuts; (1 -can) drained
7-1/3 cup plain low-fat yogurt
8-2 1/2 tb low-sodium soy sauce
9-2 tbsp reduced-calorie mayonnaise
10-1/4 tsp pepper
11-1/8 tsp ground ginger
12-1 tbsp slivered almonds (toasted)

Method:

1-Combine first 6 ingredients in a large bowl; toss gently, and set aside.
2-Combine yogurt and next 4 ingredients in a bowl; stir well.
3-Add to chicken mixture; toss gently to coat. Sprinkle with toasted slivered almonds.

Carly's Casserole

1 lb Ground beef
1 8 oz can diced tomatoes
1/4 cup of butter
1 large onion diced finely
1 teaspoon basil
1 teaspoon of garlic powder (or clove of garlic minced)
I package of Velvetta cheese and macaroni

Fry the beef, onion, garlic, basil and garlic till brown. At the same time start the velvetta and cheese and follow the directions (add the 1/4 cup of butter) when done. Mix all when done in a large casserole pan. Cover wtih aluminum foil. Bake at 350 for 40 minutes.

It's a best to freeze or serve immediately. I made this up for my hubby after being in the hospital for a week. he LOVES it!

LONDON BROIL
Servings: 8 (5 1/2 oz. each)

4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard

MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade

COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.

Drain marinade from meat. Reserve marinade up to two weeks if needed.

Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.

Transfer the steak to a cutting board and let rest for 5 minutes.

Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

MAGDALINAS VALENTINE CHICKEN

4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount

flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.

Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.

Drain and remove excess grease from skillet.

Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.

Simmer on medium heat till onions are soft.

I wish I knew how to cook loll..................but ya many of my friends r really fond of my mom's cooking & demand me, persuade me do whatever they can just to get that heavenly bite frm my mom's cooking.
She's a great cook !!
