PCM is just two-channel stereo similar to how audio CDs are recorded: no surround sound, no compression

When watching a DVD always choose Dolby 5.1 or DTS. the PCM is a way to digitized an analog signal on your receiver ADC "analog to digital converter".a standard DVD uses sampling frequency of 48kHz/24bit. The really need for PCM is in DVD audio and the next gen HD-DVD and BLU-Ray were the sampling rate is 96kHz/24bit and 192kHz/24bit. That kind of bandwidth cannot be input via S/PDIF but Only via HDMI and analog RCA multichannel input.

The use of PCM vs Dolby Digital really depends upon the application. PCM is uncompressed while DD is compressed.

Dolby 5.1 gives you 5 channel surround sound and PCM will not. Both are different kind of recordings. If you like the PCM effect, select it. It is just a personal choice.
