If the vegetable oil is used in the dough it acts as a moisturizer and fat is also a tenderizer. If it's brushed with it before baking it will give it a glaze and keep it from sticking to the pan.

Try replacing vegetable oil with applesause in most of your baked goods and even pancakes. It's wonderful and healthier.
