Please don't get me started on Hong Kong...almost died there. (Thanks to St. Theresa's Hospital I didn't.. and it WAS food poisoning!) I wanted to visit Hong Kong to get some decent take out!
But that's another story....here's a broth recipe for you and some great links for other Chinese recipes for soups and broth!
Normally, I like to suggest allrecipe.com, but they had a very limited selection. But look at the last link for some ideas for other broth recipes!
Soup
4 cups chicken broth
(and this note is from me--use the organic chicken stock)
2 tsp. lite soy sauce
1 tsp. sesame oil
¼ tsp. hot chili paste
Salt and freshly ground black pepper
1 cup shredded fresh spinach or watercress
1 green onion, thinly sliced
In a large saucepan, combine broth, soy sauce, sesame oil, and hot chili paste. Bring to boil. Season to taste with salt and pepper.

Use the first recipe for your broth, follow the second recipe for your wontons. : )
Soup For Wonton
Yield: 1 Servings
Ingredients
6 c stock
1 ts rice wine
1 1/2 ts salt
1 tb shredded ginger root
---------------------------SEASONINGS---------------------------------
1/4 ts black pepper
1/2 ts sesame oil
1/2 tb soy sauce
1 tb chopped green onion
Instructions
Heat stock, rice wine, salt and ginger root to boiling. Mix seasonings
together and put into each individual serving bowl.
Meat Wonton Soup
Yield: 1
Ingredients
1/2 lb ground pork
1 green onion (with top), chop
2 ts soy sauce
1/2 ts cornstarch
1/4 ts ground ginger
24 wonton skins
5 c water
3 cn condensed chicken broth
3 soup cans water
1 tb soy sauce
1 c spinach, torn into small
pieces, or 1 cup watercress
Instructions
Cook pork and green onion, stirring occasionally, until pork is brown;
drain. Mix pork mixture, 2 teaspoons soy sauce, the cornstarch and ginger.
Place 1 teaspoon filling on center of each wonton skin. Moisten edges with
water. Fold each in half to form triangle. Press edges to seal.Pull bottom
corners of triangle down and overlap slightly. Moisten one corner with
water. Pinch to seal.
(Wontons can be covered and refrigerate no longer than 24 hours.
) Heat 5 cups water to boiling in Dutch oven. Add wontons.
Heat to boiling; reduce heat. Simmer uncovered 2 minutes (wontons will
break
apart if overcooked); drain. Heat chicken broth, 3 cans water and 1
tablespoon soy sauce to boiling in 3-quart saucepan. Add spinach. Heat just
to boiling. Place 3 wontons and 1 cup hot broth in each soup bowl.
