Sweet-and-Sour Cabbage

Makes 6 cups
Prep: 10 minutes
Cook: 55 minutes






Ingredients
1/4 cup unsalted butter
1 to 2 pounds red cabbage, cored and thinly sliced (about 6 cups)
3/4 cup cider vinegar
1/2 cup sugar
1-1/2 teaspoons caraway seeds
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper





Directions
1. Melt butter in a deep nonreactive skillet over medium-low heat. Add cabbage, vinegar, sugar and caraway seeds. Cover and cook 45 minutes, stirring, until cabbage softens.
2. Remove cabbage from skillet with a slotted spoon, letting excess liquid drip into skillet. Transfer cabbage to a large bowl. Cook liquid over medium-high heat 10 minutes, until it reduces to 1/2 cup. Add sauce, salt and pepper to bowl with cabbage, stirring well to coat. Makes 12 (1/2-cup) servings.

Suss-Saures Rotkraut Sweet-And-Sour Red Cabbage

Ingredients

(6 servings)

1/4 c Butter
4 ea Apples; Med., Peel, Slice
1/2 ea Onion; Red, Chopped
1 ea Red Cabbage; Head,Fine Shred
1 c Red Wine
4 ea Cloves; Whole
1/3 c Brown Sugar
2 ea Bay Leaves
1/4 c Vinegar
1/4 c Butter
1 x Lemon Juice;Of 1/2 Med.Lemon


Instructions

Melt butter in 4-quart Dutch oven. Add apples and onions, saute slightly. Add finely shredded cabbage, red wine, cloves, sugar, and bay leaves. Simmer, covered, for 1 hour, then add the remaining ingredients. Heat to melt the butter and serve immediately.

I don't know what exactly you are looking for, but I do have a cabbage recipe you might want to try.

RED CABBAGE

1 large head red cabbage
2 Tablespoons bacon fat or oil
1/2 cup red wine
3 Tablespoons red currant jelly
1 teaspoon salt
dash of white pepper
pinch of powdered cloves
1 teaspoon sugar

Wash, shred and drain red cabbage.

Heat bacon fat or oil in large pot. Add cabbage;
heat 5 minutes. Add remaining ingredients. Stir well. Continue to stir a few minutes until all flavors are absorbed.

Cover; cook cabbage over low heat 25 minutes. Serve hot.

I can't give you amounts -- BUT tomato sauce, brown sugar, lemon juice, raisins.

Optional: some chopped apple. I have also been told that finely chopped dried apricots adds a nice sweetness and thickens the consistency.

For the cabbage -- make sure to freeze a head of cabbage and let defrost to make the leaves pliable and easy to work with.

For the meat mix ground meat with some raw rice, ketchup and chopped onion.

Jewish soul food. Tastes like cabbage borscht. Posting it because my recipe card is crumbling to dust. Hope you like it.
1 head cabbage, chunked in small pieces
2 lbs beef stew meat, cubed (,i use round)
1 (12 ounce) bottle chili sauce (I use Heinz)
1 (16 ounce) can jellied cranberry sauce, i use ocea spray

4 servings Change size or US/metric
