broil it, it will get the grill flavor to it. marinade it first for a few hours. depending on how well you like it done. I'd let it cook for at least 5 minutes on each side. up to 8 for the ones that like it well done.
Wet rub
1 cup of clover honey
¼ cup of Worcestershire
¼ cup of soy sauce
3 tbls of liquid smoke
½ cup of apple cider vinegar
1 tbls of adobo
1 tbls of lemon pepper
1 tbls of onion powder
1 tbls of garlic powder
1 tbls of chili powder

The fajita answer is the best. She must be from the south or southwest. However, if you have the time do marinade the meat. Especially since you will be broiling it. I have cooked it just as "steak" in a pan, and it was very good. Still a good marinade or rub on it will add to it. Avocado, sour cream, onions, etc., are the favored additions to the taco. Now I have to go to the store and get my own skirt steak and fixins'.

LONDON BROIL
Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

Well, really the best way is to grill it. Second best would be to broil it.
Finely chop up fresh mushrooms and basil and mix in some salt and pepper to taste and a little fresh lemon juice. Spread it on the steak then roll it up, secure it with toothpicks, and slice it in to 1" thick slices. Grill (or broil) until medium done. YUMMY!

i found the forman made it tough as well i bought a cast iron grill pan (that you have to season before using) just for cooking steaks indoors and it works well on skirt steak i heat pan up on stove, add steaks just to sear on both sides then throw pan in oven on broil for 5-6 min the take out and let rest for 5 min before cutting. comes up perfect all the time

Heat some olive oil in a pan with minced garlic, remove garlic before it burns, sear the steak on both sides, do not overcook, serve medium rare. Delish! Nice with sauteed mushrooms and steamed green veggies or a salad.

Marinate in lime, tequila, cumin, onion, and garlic for 2 hours. Pat dry, salt well and place under a very hot broiler for about2 minutes per side. Cut across the grain to insure a tender bite.

if i have my meat cuts correctly, skirt steak is excellent for making fajitas.cut into stripsand fry with strips of onionand bellpepper.add your seasoning.and wrap in soft tortilla with topping of your choice
