BBQ Shredded Beef
10 lbs of beef shoulder
3 large white onions
5-7 cloves of garlic finely minced
2 cups of dark brown sugar
1 bottle of favorite BBQ sauce
1 tbls of adobo seasoning, divided in half
1 tbls of garlic powder, divided in half
1 tbls of onion powder, divided in half
1 tbls of lemon pepper, divided in half
1 tbls of steak seasoning
3 tsp of salt
3 tsp of pepper
1 cup of honey
½ cup of soy sauce
½ cup of Worcestershire
¼ cup of liquid smoke
½ cup of apple cider vinegar
Begin by mixing in a large zip top bag, you may use more than one if needed, the brown sugar, half of the adobo, half of the garlic powder, half of the onion powder, half of the lemon pepper, and half of the steak seasoning. Cut the shoulder against the grain about 1-2 inches thick. Put the meat in the bag of dry seasonings and stick in the refrigerator for 24 hours. When the 24 hours is up, mix together the rest of the dry seasonings along with the, BBQ sauce, honey, soy sauce, Worcestershire, liquid smoke and the apple cider vinegar. Mix well until the dry seasonings are thoroughly dissolved. Once mixture is dissolved, add to the bag of meat and mix around to coat evenly. Refrigerate for another 12- 24 hours. Once pulled out of the refrigerator, let meat stand to get to room temperature. Heat oven to 250 degrees. Now place meat into a large pan along with the sauce. Thinly slice the white onions and mince the garlic. Mix garlic and onions into the meat coating them and thoroughly mixing them into the meat. Cover the pan with aluminum foil and cook for at least 5 hours. Now pull meat out and using 2 forks, shred the beef. Cook for another 5-7 hours depending on how well done you want your meat. Stir meat every hour or two until done. Serve on buns with your favorite sides.
Note: This is a big meal, meant for family BBQ’s. You may cut all of these ingredients down for a smaller meal if you’d like or what we did is after making this we divided it up into smaller amounts and froze it. When you do freeze it all you’ll want to do is stick it into a freezer bag. When you defrost just stick the bag into warm water until mostly thawed, then warm up in a pan on low heat. Being careful not to burn it. You may add some more sauce or some water to help moisten up the meat.
Potato salad
5-10 medium russet potatoes
6-8 slices of bacon, sliced
3-5 stalks of celery diced
6 Boiled eggs largely diced
1 large red onion diced
1-½ cups of miracle whip
1 tbsp of Dijon mustard
1 tbsp of horseradish
3 tbsp of apple cider vinegar
1 tsp of adobo
1 tsp of lemon pepper
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of sweet paprika plus
Salt and pepper to taste
Cut potatoes into 1-1/2 in. cubes. Boil until fork tender. Let cool. Place bacon in between 2 paper towels on a microwave safe dish. Cook bacon for 1 minute per slice. Let cool. In a medium bowl combine celery, 4 of the 6 eggs, onion, miracle whip, mustard, horseradish, vinegar, and seasonings until thoroughly mixed. Stack bacon together and using kitchen scissors, slice on the short, into ½ in ribbons over the bowl with the creamed sauce. Add cooled potatoes and stir gently until well mixed. Add remainder of the eggs to the top of the potato salad, sprinkle with more paprika.
Note: any of the seasoning can be reduced or multiplied as you see fit, however this is the combination I’ve found that has me taking home an empty bowl every time.
Apple crumble
For filling:
5 large Golden Delicious apples (about 3 pounds)
1 cup granulated sugar
Juice of one lemon
1/4-cup vanilla extract
1/2-teaspoon ground cinnamon
For crumble:
About 1 cup walnuts or pecans, chopped
1-cup all-purpose flour
1 1/4 cups rolled oats
1/2-cup dark brown sugar
1-teaspoon ground cinnamon
Pinch salt
1 stick of cold butter, cut into small pieces
Vanilla ice cream, as an accompaniment
Preheat oven to 350 degrees F.
Peel, core and slice apples into 1/4-inch slices. Transfer apples to a large mixing bowl and toss with sugar, lemon juice, vanilla extract, and cinnamon. Pour into a lightly greased 13 by 9-inch baking dish.
In another large bowl make a coarse crumb mixture out of crumble ingredients using fingers. Top apples with mixture and bake about 45 minutes.

My favorite is, if you can believe the name, 'Toast City'. Put out small bowls of your favorite bread toppings and sandwich ingredients. Examples include tuna salad, cream cheese, smoked salmon, PB&J (for the kids), ham, cheese, tomato, etc. Don't forget the condiments. This allows everyone to pick what they like and you are saved the trouble of keeping things warm.. Pick several different types of bread, tortillas, pita, etc., and set up a toaster/toaster oven. We used to do this in college and, with a little imagination, we could produce some really wild combinations.

Have a buffet of different foods, finger foods, chicken fingers, meatballs,different salads, buy a roast and cut into slices for eating a sandwich or just to cut and eat alone. Also make some cut up potatoes add some spices and through in the oven (they are very good).

My family does gathering often and usually we have chicken drummets (great for kids and adults), macaroni and cheese, green beans(great way to sneal in a veggie for kids), potato salad and a general dessert like cake or cobbler. Sometimes we cook and sometimes we have it catered...depend on what your money looks like.Enjoy

you want something easy for that many people. make your own tacos might be something to consider. put all the ingredients on the table and they can put what they want in the taco....have some refried beans and taco meat and/or chicken along with salsa, tomatoes, hot peppers, lettuce, cheese, sour cream etc.. the kids will like this kind of dinner.

chicken always works. it's easy to make somewhat cheap and good. if not little sandwiches are always a hit too. Just make sure they have varieties. (some ham, turkey, some w/ cheese, some w/ onions, etc.) As for dessert anything can work.

for children try homemade pizza ,,and some pasta,,spaggetti for the kids..add up a little barbecue,,,some burnt meat,hotdogs and marshmallows....have different kinds of sauces for the barbecue..then,,try having a punch for the kids,,try to have a 1 pack of powdered orange juice,,1.5 liter of any colorless soda,,,a some fresh slices of apples,,oranges and other citric fruits,,,for the adults have some adult drinks,,not that very hard drinks you know...add some chickens,,maybe roasted or fried...then a bunch of rice for their hunger.....what more??ice cream,,,,if your budget concious have them in small cups or pints,,just enough pieces for everybody or if you dont like ice cream,have fruit salad or maybe chicken and ham,or tuna.....i hope you like it...

we just grilled...hamburgers (angus) hot dogs (whatever was in those) crab legs and had cold shrimp and potatoe salad doubled eggs and doritos.

If you doing a cookout. go for baby back ribs..you can do a bunch at a time and they can sit and we warmed..go to allrecipes.com to get ways to prepare them.
