Do you mean deep frying? Never thought of that, but I would imagine it would be pretty tasty. Still, I think it might be a waste of good fish, unless you got some cheap chum salmon. If you bake a good salmon filet (well, really, braise it with white wine, lemon and dill) until it's just cooked, then top each serving with a drizzle of beurre blanc or even a dollop of garlic aioli, there's nothing better.
If you do deep-fry your salmon in single-serving pieces (can't really imagine deep-frying a whole filet), I'd serve it with a roasted red pepper remoulade sauce (kind of like a mayonnaise, with pureed roasted red bell pepper... makes me hungry just thinking about it)
If you meant pan-frying your salmon, I would hesitate doing this, because it's so much easier to overcook with the high heat. One way you can help to mediate the heat a bit is to coat the salmon with breadcrumbs or even chopped nuts -- I once did a light teriyaki salmon with a macadamia nut crust and an orange marmelade glaze that came out halfway decent.

Well, not too sure on that one ...although baked may be the best solution, I've never had it baked. I've only had it fried. Fried in butter is a good way to cook it.

Broiled dill Salmon
Ingredients:
½ cup melted butter or olive oil
2 tsp. lemon juice
1 tsp. salt
1 tbsp. fresh dill chopped
1/8 tsp. red pepper
4 salmon steaks, cut 1 inch thick (about 2 pounds)
Preparation:
1.Place melted butter, lemon juice, salt, fresh chopped dill and red pepper in small bowl and stir to combine.
2.Preheat broiler.
3.Place salmon steaks on lightly greased pan and brush with half of seasoned butter.
4.Broil, 5 inches from source of heat, 5 to 10 minutes.
5.Turn heat to 400°F, close oven and bake an additional 5 - 8 minutes.
6.Brush with remaining butter blend. Serve.
Beverage suggestions:
Light lager beer, Chenin Blanc

I fried it last summer and it was really good. I don't care for baked fish.
The best way to cook Salmon in my opinion is on an open grill. It is delicious!!!!!

it taste better fried. Just use butter, then put some salt, pepper and a drop of lemon on it before you fry it. When it is already that perfect fried orange color, serve with a slice of lemon. YUM!

Baked. Salmon is too rich and delicate to ruin with frying. Bake it, broil it or grill it, but don't fry it.
