Kyocera ceramic blades

IMO the top rung on the ladder. But brace yourself, sit down, and be ready for some sticker shock. As far as I know they don't come in sets. IE I have only seen them priced individually and they start at about $100 a piece so a set you make up could run you a $1000 or more...

There are many fine name brands, and most of them offer 2 or more quality levels, so the "name" doesn't say it all. And the real issue is how you USE, CARE FOR & MAINTAIN whatever you buy. If you have a culinary school in your area, contact them for recommendations, and consider taking their cultery course.

Chicago cutlery. Was given a set of six knives 12 years ago and have them all except one. Since you are investing in good knives you need to get a knife sharpening tool also.

Cutco is really nice and very sharp and the company sharpens the blades for you...have had mine about 6 years and have not needed sharpening yet

Chicago Cutlery is real nice, but no one else in my home takes care of it and puts it in the dish washer. Just an FYI, that warps the wooden handles of just about any knife over time.

I prefer a carbon steel blade (it's easy to sharpen). Sabatier makes good ones.
