The trains change tracks after the station or before (so yes, they can go back and change tracks after left the station, but remember that the lines are two tracks, so they must ever change of track). In some rare cases there are loops at the end of the lines.

At the end of some lines, the trains can switch to another track. Usually the driver just moves to what used to be the back car, which becomes the front car, and goes back on the same track.

Some of the trains turn around (there is a loop for example at the end of the #6 IRT and the train turns around and heads back for the Bronx.) Other trains just go backwards.

It goes backwards yes, I would assume however that it will switch tracks so as to not run into another metro

you are in deed right... they crash.
no... they simply reverse and go the other way, that's why their are two fronts on a subway train and two trains in a subway. this way each go back and forth.
