First try to buy bananas that are not too ripe, clean off any sticky residue with plain water and blot dry. Once bananas are the desired ripeness you can store them in the fridge. The peel may get darker but the banana should stay nice and yellow. Hope this helps.

More likely.....fruit flies.

Gnats inside of the house can come in many forms. Sometimes, fruit flies are mistaken for gnats. Fruit flies spend their time around sinks in the kitchen and bathroom because they need daily moisture. Fruit flies also frequent kitchens where bananas, potatoes or onions are left out in the open. These items provide good breeding sites for fruit flies. These can be controlled by storing the aforementioned food items in a cabinet or other container where the flies cannot get to them. Also, a trap can be made using apple cider vinegar and a small jar. Place about 1 to 2 inches of vinegar in the bottom of the jar and place it in areas where you see the flies. If you notice a bunch of flies in the jar, quickly place the lid on it and swirl the jar to drown the flies. . Nathan Riggs, EA-IPM (Fire Ants) Texas Cooperative Extension - Bexar County

Suggest just buying enough for 3 days at a time. Since I have kept the supply low, I have not had any problem with gnats.
