Just cheddar, but not the garbage you buy in the supermarket. The really sharp, flavorful stuff you have to drive to Wisconsin and hunt around for the tiny little cheese shops that you'd never spot if you weren't looking for them for. If you immensely like cheese and never had this stuff before, don't try it unless you're between jobs and able to move your residence.
