I Changed out my old gravity feed heating system, and replaced it with a Rheem Criterian11. Do I need to leave the existing air return opening, its very large.30 inch by 20 inch
or can I reduce the size?

Possibly, but you mat want to check with your installer or an HVAC tech from Rheem to determine the CFM required for that model and size the return air accordingly.

30"x20" sounds pretty large to me for forced air.

The best thing to do, and the cheapest, is to install a butterfly shutoff to control the air flow. All this is is a stiff piece of metal on an axle. The axle pierces the duct from side to side and has a handle on one end. When the butterfly is turn so that it is wide open, all of the air can flow easily. You cut down the air volume by closing the butterfly to the point that you feel is best.
