it makes the flesh much more tender, if they are already dead, it's tough. one of the best ways is to start with cool water, put the lobster in the pot and turn on the flame, as it comes to a boil, the lobster is slowly cooked, making it super tasty.

freshness-they don't have to be boiled alive, but they supposedly taste better because they are fresh.
