Well that's not very practical (or hygienic).

But I would agree that an awful lot of food goes to waste in restaurants. I believe that the portion sizes are way too big. That contributes to much of the waste.

Restaurants could start you with a smaller portion of some foods like bread, vegetables, salads, etc. and then bring more if you request. I've been to major steakhouses that pride themselves on bringing you enormous servings of side dishes. I ordered a side dish of spinach and they brought a bowl large enough to serve 6 people (no exaggeration).

It's ridiculous.

At the very least, we'd consume fewer calories.

Are you going to figure out a way to collect and freeze this waste? Some people can use the vegetable oil from restaurants to fuel their cars. It would be hard to separate all the trash from food waste and even then it would not be a good source of nutrition for straving people.
