Marinade for Shish Kabobs
2 tbsp. sugar
2 tbsp. salad oil
1/3 cup soy sauce
2 lbs. meat
Seasonings: garlic, onion, black
pepper

Season meat. Roll in sugar and oil mixture. Soak in soy sauce all day or night. Thread on skewers. Grill

Cajun Shrimp Marinade
1/2 c. vegetable oil
1/4 c. soy sauce
1 tsp. freshly grated lemon peel
1/4 c. fresh lemon juice
1/4 c. fresh parsley
2 tbsp. each Worcestershire sauce and
red wine vinegar
1 tbsp. dry mustard
1/2 tbsp. paprika
1/2 tbsp. minced garlic
1/4 tsp. ground red pepper

Marinate raw peeled and deveined shrimp for 1/2 hour. Thread shrimp on skewers and grill. Reserve marinade for dipping.

2 tsp. unseasoned tenderizer
2 tbsp. dry sherry

Mix together, Use as is for marinade or boil for 10 minutes and use as a basting sauce.

Lime Honey Marinade
1/2 cup lime juice
5 medium garlic cloves, minced or pressed

Raspberry Marinade for Duck or Cornish Hens
3 c. fresh raspberries

Sweet and Sour Marinade for Grilled Beef, Chicken or Turkey
1 can (8 1/4 oz.) crushed pineapple, undrained
1 med. onion, cut into slices and separated into rings
1/2 c. vinegar
1/2 c. molasses

1 clove garlic, crushed
1/2 tsp. ground ginger
1/4 tsp. red pepper sauce

Mix all ingredients (makes 2 1/2 cups marinade). Marinate meat in a covered non-metal dish or sealed plastic bag in the refrigerator at least 4 hours. Cover and grill 5-6 inches from medium coals for 20-30 minutes, turning and brushing with marinade 3 or 4 times, until done.

1 cup salsa
1/2 cup lime juice

Mustard Marinade for Country Style Ribs
1/3 c. Dijon mustard
2 tbsp. red wine vinegar
1/4 c. olive oil or salad oil
1 clove garlic, minced
1/2 tsp. thyme

1/4 tsp. pepper

In small bowl combine mustard and vinegar. Beating constantly with a wire whisk, add oil, a few drops at a time. Then beat in garlic, thyme, Worcestershire sauce and pepper. Pour over country style beef ribs in a shallow pan. Let stand for about 2 hours. Lift ribs from marinade and grill 4 to 6 inches above hot coals, 20 to 25 minutes.

1/2 cup picante sauce
1/3 cup red wine vinegar

1 clove crushed garlic
1/8 tsp. black pepper

Pour marinade over cooked sliced beef. Marinate for 4 to 24 hours in refrigerator. Use in salad, for pita sandwiches or in tortillas. Enough for 1 pound.

i found a pretty good marinade that involves

1 cup of jack daniels whiskey
1 cup of italian dressing or olive oil
1 store-brand marinade of your choice (Pete's, Dale's, or I like the A-1 ORIGINAL or JERK if you want to add tang to it - the other "flavors" aren't very good)

mix it together and it's potent, but the italian dressing keeps it from being to rich or thick. soak for at least 3 hours. or put it all in a zip-loc bag. (or two ziploc bags if you have more than 2 steaks.)

Newman's Own italian dressing with a little Old Bay, Lawry's Salt, and/or "Italian Seasonings" by McCormick is a mainstay around this place. With beef, a little MGD or Ten High can be added for that "roadhouse" flavor, with chicken, a nice German white wine can be added for a continental flavor. If I'm out of italian dressing, I always start with an oil base and keep a large number of seasonings like Lawry's, Old Bay, McCormicks on hand along with Kimlan Soy Sauce and Lea and Perrins Worchester sauce.

I almost forgot, theres a good Basque red wine sauce that is just too tasty for words.

My favorite marinade is plain old fat-free Italian Dressing, any brand. It's great on everything!

For steaks...I like to put Dale's marinade on them.
