I always on like sundays cook all my chicken, potatoes, rice and meat for the week. Or at least try to get some of it cooked so when I need to i can take it out of the fridge/freezer and pop it in the microwave. Almost any reciepe you can do that with, but its not always as healthy.

Hi and sweets to you for asking about dinners for a new mom!
Carly's Casserole
1 lb Ground beef
1 8 oz can diced tomatoes
1/4 cup of butter
1 large onion diced finely
1 teaspoon basil
1 teaspoon of garlic powder (or clove of garlic minced)
I package of Velvetta cheese and macaroni
Fry the beef, onion, garlic, basil and garlic till brown. At the same time start the velvetta and cheese and follow the directions (add the 1/4 cup of butter) when done. Mix all when done in a large casserole pan. Cover wtih aluminum foil. Bake at 350 for 40 minutes.
It's a best to freeze or serve immediately. I made this up for my hubby after being in the hospital for a week. he LOVES it!

Lasagna, cook a pound of burger, add garlic (minced) a little Italian spices to that add 1 lg can tomato sauce, 1 med can tomato paste, mix in 1 lg carton of cottage cheese, simmer 20 minutes, cook your lasagna noodles, drain and rinse, layer noodles and sauce adding mozzarella cheese between every layer. Then you can either bake it for 30 minutes at 350 and she can warm it up when she wants can be frozen or just refrigerated

The frozen Crock pot meals are great. I am a mom & wife that loves to cook but there are always easy ways of doing everything. Also if it is in your budget Schwans is great.

Lasagnes and meatloaf. You could also make chicken or veggie lasagnes just in case that's too much beef.
