Egg Fried Rice

Ingredients
225g long grain rice, rinsed and drained
450ml water
1 egg, beaten
1 tbsp Sesame Oil
2 tbsp corn oil
Method
1. Place the rice and water in a saucepan and bring to the boil.
2. Reduce the heat, cover the pan and simmer for 20 minutes, until the water has evaporated and little craters appear on the surface of the rice.
3. Remove from the heat and leave it to stand, still covered, for 10 minutes. Fluff with a fork or chopsticks.
4. Stir the egg and sesame oil together.
5. Heat the corn oil in a wok over a high heat.
6. Add the egg and sesame oil mixture.
7. Keep agitating the egg with chopsticks or a fork to ensure the mixture doesn’t stick to the wok or burn.
8. Add the hot rice and fry quickly, mixing well. Serve immediately.

I was just looking for a recipe this morning for this as I have never made it either! I searched quite a few sites and just figured I would make up my own method taking all the recipes and suggestions in consideration. I am using instant rice, even though most recipes did not call for it, but I am too lazy to go to the store this morning. A few of the sites, said to make the rice in advance and cold, already cooked rice works best. I cooked mine in chicken broth, which surprisingly none of the recipes I found called for. One called for a dash of oyster sauce when frying. So I cooked the rice and peas together this morning. This evening I will beat 2 eggs and cook them on medium heat in some sesame oil, then chop. Add rice and stir fry with oyster or soy sauce until beginning to turn golden. I may saute some onions prior to cooking the egg, too. I am also going to add some chopped water chestnuts. Hope this helps, or at least offers a few suggestions!

ok... first cook your rice the day before or early in the day you are going to cook it. I put mine in the fridge after it is cooked.
Fry 2 or 3 eggs (depending on how much you are making) kinda like you are making an omlet.
Cut the eggs into little strips.
Then put some oil in your pan, onions (green or regular )and sautee them for just a few minutes. Add the rice . I use a mix called Sun-Bird Fried Rice mix.... you can find in in the ethnic section of your local supermarket. put the mix in and stir it all up. add the eggs right at the end.
I usually stir fry some chicken to add to it at the end. You just cut up the chicken in small pieces or strips and stir fry it until it is white. doesn't take very long. set it aside until you are ready to add it to the whole thing. Shrimp is good added too.
Then if you can soy sauce add that to your taste or let each person add their own. Hope this help

Boil rice of choice as per instructions on packet, when cooked, put on one side to go cold. Chop and fry an onion in some oil, (about two tablespoonsful) until golden brown, (not black!) also put to one side to cool. now take two or three eggs, break into a bowl, whip them up into a yellowy mess with a fork, and heat (over a medium heat, don't have it full blast else it'll burn) another tablespoon on oil in the frying pan, pour in eggs and let the bottom bit set, push the egg to make holes so that the runny egg can fill them so it sets completely - this is an omelette - congratulations, you get to know how to make two dishes! When your omelette is cooked, (when there's no runny egg left) take off the heat, put it on a plate and when cool enough either roll it up and slice it finely, or just chop it up - add everything back into the pan, rice, onion and eggs, check seasoning, in other words, taste it - does it need salt? a little chili perhaps? Add a little and keep tasting until you're happy! Bon apitite as the French say - but then i'm not French, but good luck and good eatin'!

I always use "day old" rice which has been cooked and allowed to cool down. The rice should be precooked and dry.
Chop some spring onions (or ordinary onions) and saute in a little hot groundnut oil in a wok,
Add the rice, and toss until it is heated through and starting to brown just a little bit.
Move the rice to the edge of the wok, and dribble in beaten egg, incorporating it into the rice as it starts to set.
Add some light soy sauce to taste, and any other pre-prepared ingredients you like - chopped mushrooms, prawns, chicken peas etc.
Dribble over some toasted sesame seed oil and garnish with some more chopped green onion

Easy. Only try to fry rice which is al dente or firm to the bite. Rinse thoroughly and let it drain properly. Heat a generous amout of oil in the wok and add the rice. To get the proper takeaway egg through the rice crack an egg but only use the yolk. Discard the white, stir and add bit by bit. Only takes a few minutes!

Here's my recipe. Really easy, and yummy every time.
Prep:
1. Cook rice (just boil. The day before is best)
2. Make scrambled eggs. Take them out of the pan and slice them up in thin strips.
3. Cut up scallions.
Putting it all together:
In a frying pan, add oil and half a tea spoon of chopped garlic, half that amount of fresh ginger (or dried works too). In about 1 min, add your rice, the scrambled eggs, scallions and anything else you like (peas, carros, etc.). Fry it up on high heat. If you like, finish it off with a splash of soy sauce.
And there you go.

Melt knob of butter in pan, add chopped onion and fry until soft, frozen rice is the best for this as it does not stick, microwave the rice for about 3-5 mins, to the onion add rice, make a space in the centre of the pan add egg yolk, scramble it like you would an omelette, then mix all together, alternatively you can also add fresh mushrooms, not tinned mushrooms too watery, or peas, also you can add turmeric to give it that pilau colour, or a spot of paprika. Thats my method and my man loves it!

Boil rice, stick in fridge to cool. Fry an egg, mix up egg whilst it cooks with a fork. Stick in some soy sauce, put rice back in and mix up. frying pan takes ages to clean but it's worth it. Enjoy.

Have ready cooked rice.
In the frying pan add some butter, chopped onion and salt to taste. cook until onion is soft then add beaten eggs as many as you like. Fry gently stirring until eggs appear in small lumps, at this point add your rice until it all blends in. Now it's ready to serve.
