As a carpenter...O.S.B. has more tensile strength than Plywood, because the strands are orientated omnidirectional, as the name implies. Plywood is more rigid.
This means a building sheathed with osb can withstand greater wind loads, but the plywood building will have straighter walls. Plywood's rigidity enables it to pull the wall studs into alignment better.
