There's a gorgeous french cheese that is usually in a round wicker type of container. It has a a yellow crust and a beautifully creamy cheese underneath. I think it's called Gargantin. Another one I really like is gorgonzola. I like all cheeses but they have to be ripe.

Smoked Applewood Chedder, Port Salut, Mull of Kyntre Chedder, Brie it all depends on what you are doing with it.
