Buy an instant read thermometer....its the only way to control for all the variables, like thickness of the meat, temp of the bbq, whether or not the meat is cold when you put it on the grill.
For pork, the thermometer should read about 170 degrees. Make sure to insert the thermometer into the thickest part of the meat. I usually take pork roast off the grill at 160 and then let it rest.

Give you my simple receipt. No fuss, no mess and turns out great every time and can be used for Pork or Beef.
Take two large sheets of Heavy Duty Reynold's Aluminum and place in a baking pan making a pocket for the roast. Be careful not to put holes in the foil.
Cut two Celery stalks clean and cut to length of roast, and lay them on the foil.
Salt and peper roast completely and lay on top of celery. (celery prevents roast from burning and also gives off flavor).
Peel and slice a large Onion and place on top and around the roast.
Mix 1/4 cup Worchestershire Sauce, 1/4 cup Soy Sauce and one cup of water and pour liquid over roast. Add some Liquid Smoke to this mixture if you like the smoke flavor (I do).
Now pull the 2 length wise ends of the foil together and fold together until you create a seal. then do the same to each of the other sides. This completely seals the roast.
Place the roast on grill, close cover (without the baking pan) and cook for 2 1/2 to 3 1/2 hours. (I prefer coals but it works in a gas grill or even in an oven just as well but when using coals make sure the bottom of grill is covered with them)
Once the roast has baked that long, open one of the ends just enough to drain the liquid off (throw the liquid away). Once you have done this, you can now open the foil and fold the ends inside. Place the roast back on the grill and brown to your liking, then if you desire, you can add Bar B Que Sauce over the roast and let roast cook alittle longer to obsorb the BBQue flavor..
***Hint*** Any left over pork.... use it to make some excellent Fried Rice.
I have been doing my roasts this way for several years and it has yet to fail me.
This roasting method can also be used for baked ham but omit the sauces and use Sliced Pineapple and brown sugar.

Well I cook mine real slow, about 220 degrees, indirect heat for a butt roast of 6lbs about 8-9 hours...yummmmmy

Put a meat thermometer in it to be safe. When it reaches reccommended temperature it is done without being dry. Best kitchen gadget ever invented.
