In order to properly interpret Old Testament Scripture, you have to do it in light of the New Testament.
There are some people who, by virtue of their line of work, simply cannot take Sunday off from work. People who work in hospitals, television and radio stations, government, security, utility companies, what have you.
This is why the Church offers mass on Saturday evenings, and why more and more parishes are offering Sunday evening masses as well. So people, who have to work, can work and fulfill their Sunday obligation to attend mass at the same time.

The rule of interpretation is context. Without context the meaning of a statement can be anything you want it to be. For example, here are two phrases out of context, from the Bible. "Judas went and hanged himself." and "Go and do thou likewise." The Bible does say that. However, if we keep the two statements in context then the Bible clearly does not say that. There is an Old Testament and there is a New Testament. The only reason there is a New Testament is because the Old Testament was fulfilled and replaced by the New Testament. The Old Testament was the form and the New Testament is the substance. The Old Testament says stone the harlot. The New Testament says, let him without sin cast the first stone. The Old Testament says don't commit adultery; the New Testament says don't even imagine it. The Old Testament says sin and die; the New Testament says sinners have hope in Jesus. The Old Testament required rest on Saturday as a pattern; the New Testament does not specify a certain day but talks about a different kind of rest that the Old Testament merely patterned.

The sabbath command is NOT in the New Testament. Christians are under the New Covenant NOT the old
NIV
Lk 22:20 In the same way, after the supper he took the cup, saying, “This cup is the new covenant in my blood, which is poured out for you.
Jesus is the christian sabbath rest for christians today
Col 2:16 Therefore do not let anyone judge you by what you eat or drink, or with regard to a religious festival, a New Moon celebration or a Sabbath day.
Col 2:17 These are a shadow of the things that were to come; the reality, however, is found in Christ.

Let me begin by saying that between Exodus, Leviticus, and Deuteronomy there are conflicting stories regarding the 10 commandments. Watch the History channel there is a lot of shows on lately that get into this question very deeply but without prejudices. The word Commandments was changed, by the persons who decided to write the book for the world to follow, from the word commitments. That in itself is very profound. The actual words given to Moses were ... You shall remember to keep a day for Me, and you shall call it holy. This, so that you do not long stay in your illusion, but cause yourself to remember who and what you are. And then shall you soon call every day the Sabbath and every moment holy. ... No more no less. There are many many more contradictions from the beginning of the Bible to the end. But I hope that if you are able to spend some time reflecting on this answer, it will bring you some resolution to your question.

You're leaving out the part of the New Testament (much more recent than the verse you cited), in which Jesus heals people on the Sabbath, and His disciples pick grain and eat it on the Sabbath.
You're also forgetting the New Testament verse (again, much more recent than your carefully selected verse citation) where Jesus says, "The Sabbath was made for man, not man for the Sabbath."
You're right in that a lot of people work on Sundays -- but how many of them are devout Christians?
Only if all of these people were devout Christians would your complaint have merit.

A bigger question is why is Sunday the Sabbath? What if God started on a Thursday and worked through the weekend?
Also, if you read Leviticus, there is a lot of things we can be killed for that we do which controvenes God's laws.

Well I for one believe that Sat is the true sabbath since it says
Exodus20:8-9
8 "Remember the Sabbath day by keeping it holy. 9 Six days you shall labor and do all your work, 10 but the seventh day is a Sabbath to the LORD your God. On it you shall not do any work......."
Since when was Sun the 7th day of the week.
Matthew 7:1-2
1 "Judge not, that you be not judged. 2 For with what judgment you judge, you will be judged; and with the measure you use, it will be measured back to you.
Who are we to persecute people that don't want to follow God's law. If they are really doing wrong by the Lord then he will judge them in the end. Not us.

I went to a christian high school, but don't necessarily consider myself a christian, but I'll give a go at your question
That was written in the Old testament of the Bible. If your not familiar with the bible, old testament (Genesis-Malachi) is writings written before jesus was born, New Testament (Matthew-Revelation) was written after. In the Old testament people would commit sins, and the punishment would be very severe, no matter what the sin, and animal sacrifices were used to please God, and "erase" the people sins. But when jesus came, lived a sinless life, and died on the cross for everyone, his blood was shed, and therefore he took the punishment for everyones sins, and thats why christians aren't running around sacrificing animals and stoning people (the punishment for adultry in the old testament i believe).
I hope i was at least kinda helpful.
just FYI, this isn't necassarily my view, its just a christian viewpoint.

My god when will people learn that the bible is to be taken symbolically or do you think all Christians believe in the tale of Adam and Eve? And it says nothing about killing!!! Christians shouldn't kill or else they're not Christians!! By the way the bible was written about 2000-3000 years ago. You think the views of people might have changed just a bit since then?

The Sabbath in the Old Testament is considered to be Friday at sunset till Saturday at sunset. Creation in Genesis shows God saying something about Night coming first. I am told the Jews went by a Lunar calendar, to explain the sunset to sunset.
Now, just think of all the people who go out to the bars on Friday night.

You are confused because you don't understand what Christianity is all about. According to the Bible, if you accept the sacrifice of Christ, all things are lawful for you. Thus there is no need to observe special days and seasons, including the Sabbath.
And what about all this "killing people?" That definitely has nothing to do with Christianity.
