Rebecca's Creamy Mushroom Soup
A friend of mine made this at a party, and oh my GOD, it was good! I don't even like creamy soups, but I think I had three bowls of it! It's not a quick, easy recipe, but it's WELL worth the effort to make. If you try it, I hope you enjoy it as much as I do!
8 tablespoons (1 stick) butter (but I think I cheated and added about 1/2 stick more)
2 cups chopped yellow onion
2 pounds button mushrooms, sliced ( I think I used 4 of the large containers)
1 package portabella mushrooms, dark gills removed, cut into chunks
2 large garlic cloves, minced
8 cups canned low-salt chicken broth
2 cans (26 oz.) Campbell's? Cream of Mushroom OR 98% Fat Free Cream of Mushroom Soup
1/4 cup chopped fresh chives
1/4 tsp. dried thyme leaves, crushed
1/2 cup whipping cream
1/4 cup Harvey's Bristol Creme Sherry
Saute first 5 ingredients until softened. Add mushroom soup and broth to pot. Bring to boil. Add chives and thyme. Reduce heat to low, cover and simmer about 2 hours on low. Stir in whipping cream and sherry. Keep on low heat until served. Makes a lot of servings!

Love this tasty mushroom soup
4 cups button mushrooms
1 tablespoon sunflower oil
3 tablespoons butter
1 small onion, finely chopped
1 tablespoon flour
1 3/4 cups vegetable stock
1 3/4 cups milk
1 pinch dried basil
2-3 tablespoons cream
salt
freshly ground black pepper
fresh basil leaves, to garnish
Pull the caps away from the mushroom stalks.
Finely slice the caps and chop the stalks, keeping the 2 piles separate.
Heat the oil and half the butter in a heavy based saucepan and add the chopped onion, mushroom stalks and 1/2-3/4 of the sliced mushroom caps.
Fry about 1-2 minutes, stirring frequently, and then cover and sweat over a gentle heat for 6-7 minutes, stirring occasionally.
Stir in flour and cook for 1 minute.
Gradually add the stock and milk to make a smooth, thin sauce.
Add the basil, and season with salt and pepper.
Bring to the boil and then simmer, partly covered, for 15 minutes.
Allow to cool slightly and then pour into a food processor or blender and process until smooth.
Melt remaining butter in a heavy based frying pan, and fry the remaining mushrooms over a gentle heat for 3-4 minutes until they are just tender.
Pour soup into a large clean saucepan and stir in sliced mushrooms.
Heat until very hot but not boiling and add salt and pepper to taste.
Add the cream.
Serve at once garnished with the basil leaves.

Drain. Preheat oven to 350 levels. Put the meat in a bowl and add inexperienced chilies, chili powder, cumin, garlic powder, salt & pepper. Mix well. In a small bowl mix the soup and Ro-Tel's. Spray a 13 x 9 glass baking dish and organize 4 tortilla shells on the bottom. INGREDIENTS
2 1/2 Lb. Baby Red Potatoes
1 Jumbo Yellow Onion, diced
1/2 Lb. Raw Bacon, diced
3 Stalks Celery, diced
1 Qt. Water
1/4 C. chicken base
1 Qt. Milk
1 tsp. Salt
1 tsp. Black Pepper
3/4 C. Flour
1/4 C. Chopped Parsley
1 1/4 sticks margarine
1 C. whipping cream
for garnish:
Shredded Colby cheese,
fried bacon bits
chopped green onions
PROCEDURE
Boil potatoes in water to cover for 10 minutes. Drain; set aside.
Sauté bacon, onions and celery over medium-high heat until celery is tender in large, heavy pot.
Drain bacon grease and return bacon, onions and celery to pot.
Add milk, water, chicken base, salt and pepper.
Heat over medium-high heat until very hot but do not let soup boil.
Melt margarine in heavy, large saucepan over low heat.
Stir in flour to make a roux.
Mix well and allow to let bubble, stirring 1 minute. If desired, a larger amount of roux can be made to produce a thicker soup.
Gradually add roux to soup, stirring constantly. Continue to cook, stirring, until thick and creamy.
Stir in potatoes, parsley and cream. Serve hot, garnished with cheese, bacon bits and/or onions.
Serves 10-12

Cold Creamy Carrot Soup
Makes 4 servings
Ingredients:
3 cups fresh carrot juice
1 large avocado
1 handful alfalfa sprouts cut into thirds
1 small sprig parsley or cilantro leaves
Preparation:
Make or buy carrot juice. Cut avocado in half, peel and remove pit.
Place carrot juice and avocado in blender, and blend until smooth.
Put sprouts and parsley on top of the soup.
Note: Any combination of vegetable juice can be used to make soup.
Serving Ideas: You can add ginger to this recipe

Ingredients
(4 servings)
4 c Water
1 1/2 ts Beef Bouillon Granules
1/4 c Barley Uncooked
1 ts Olive Oil
1/2 c Chopped Onion
2 cl Minced Garlic
5 c Sliced Mushrooms
2 tb Dry Vermouth
1 c Evaporated Skim Milk
1/4 c Sliced Green Onions
1/4 ts Pepper
1/8 ts Salt
Instructions
Combine Water & Bouollon Granules in A Large Dutch Oven. Bring To A Boil. Add Barley & Return To Boil. Cover, Reduce Heat & Simmer 1 Hour OR Until Tender. Remove 1/2 C. Barley, Using A Slotted Spoon; Set Both Mixtures Aside. Coat A Medium Skillet With Cooking Spray; Add Oil & Place Over Medium Heat Until Hot. Add Onion & Garlic & Saute 2 Min. Add Mushrooms & Vermouth; Cook An Additional 2 Minutes, Stirring Frequently. Cover, Reduce Heat; Simmer 5 Min. Remove From Heat. in Processor, Add 1/2 C. Drained Barley, 1/2 C. Mushroom Mixture, And Milk. Process Until Smooth. Add Pureed Barley Mixture & Remaining Mushroom Mixture To Dutch Oven. Bring To A Boil. Remove From Heat.Stir in Remaining Ingredients. Serve Warm.
Creamed Soup of Butternut Squash with Sage
Ingredients:
(Serves 8-10)
4 ea. Butternut Squash (Cut in 1/2 lengthwise and Seeded)
10 tbsp. Unsalted Butter
8 tbsp. Honey
2 Bunches of Sage (Chopped)
1 onion (Peeled and Diced)
1 qt. Chicken Stock
3 cups Heavy Whipping Cream
Salt & Fresh ground black
Procedure:
Place the Squash skin side down on a baking pan and fill the center with 1 TBS each butter and honey. Sprinkle with 1/2 of the sage and season with salt and pepper. Pour 1/2 inch of water in the bottom of the pan and cover with foil. Bake until the squash is tender in a 350 degree oven. (40 to 90 minutes Cooking time varies depending on the size and maturity of the squash)
Allow the Squash to cool to the touch and using a large spoon scrape the meat from the skin. Be careful to reserve the butter and honey from the center with the meat.
Using a large pot, sauté the onions in the remaining butter until translucent and add the squash. Cover in the chicken stock and simmer for 10 minutes. Puree the soup in a blender until smooth. Add back to a large pot and add the cream. Season to taste with salt and fresh ground black pepper. Garnish with the remaining sage

Cream of Salmon Soup
1 7oz can salmon
2 tbsp butter
1tbsp flour
11/2c milk
2/3 c evaporated milk
1tsp salt
1/8 tsp pepper
1 hard boiled egg chopped
Melt butter and flour, stirring well,slowly add milk and evaprated milk,blend well,drain and add salmon, egg,salt,pepper, do not boil,but heat thoroughly over med heat, serve hot soup over biscuits or toast.

I recently lost my brother to cancer when i went to see him i made this potato soup he really liked it. 2 potatoes one celery chopped one quarter onion chopped one quarter carrot chopped very fine three heaping tablespoons flour one can Swanson chicken broth one chicken bouillon cube 1 teaspoon dry mustard 2 cups milk two tablespoons margarine i cut the potatoes in small squares and boil in water for 15 minutes i saute onion celery and carrots in margarine add dry mustard stir in flour it will be all clumpy i drain potatoes put back in pot add clumpy mixture from pan on top of potatoes pour in one can chicken broth and milk keep stirring it will thicken as you stir and 3 tablespoons Worcestershire sauce stir in soup Bonn appetite
