Just heard this great idea for make-ahead omlettes, especially great if you have family staying over the holidays. Have everyone write their name on a ziploc bag in permanent marker. Each person breaks two eggs into their bag and smashes it up to mix. Then, you have available on your counter bowls with all the variety of things folks like in their omlettes -- cheese, ham, bacon bits, whatever. They add what they want to their bags and seal, making sure all the air is out. Then refrigerate over night. Next morning, set a pot of water to boil. When boiling, plop all the bags in for two minutes. Remove them with tongs. When cooled enough to touch, each person opens the bag and the omlette slides out onto their plate. No real cooking and no mess on the holiday morning, but great, personalized omlettes. Try it!

spray your pan with a cooking spray, then add whatever meat and veggies you'll have in the omlette to warm them up (not the cheese). add the eggs (already cracked and scrambled with a little milk) to the veggies/meat. when it has cooked enough to be solid on the bottom, use a spatula to lift the egg and let the runny, uncooked egg fall underneath to get cooked. when the omlette is almost all the way cooked, sprinkle cheese over it and fold it in half. when the chese is melted, the omlette's done.

You scramble Eggs, Red Pepper, Green Pepper, and Black pepper, as you would scrambled eggs, after it's done put a slices of american cheese over it in the pan with the heat off and let it melt onto the egg. Then you have an omlette. Bon Appetit

You can also put butter in a pan on medium heat. Pour in 3 beaten eggs. let the eggs start to solidify... as they cook, lift the edges of the omelet and tilt pan so any uncooked egg runs under the edges of the omelet. Keep doing this until the omelet is almost completely cooked. Have handy some shredded cheese, cubed ham (whatever you like on your omelet) and add this to the omelet when it is almost done. Use spatula to fold omelet in half and slide onto plate.

You can't make an omlette without breaking some eggs.

I think a drizzle of water is the key to a fluffy omelet. 2 eggs, 1 tsp of water beaten with a fork to a frothy stage, about 20 seconds. start with a pat of butter. add cooked meat or onions or peppers first. sautee for a minute then pour on the beaten egg mixture. add salt and pepper. scoop with a spatula into the center of pan. let it cook for about a minute. turn burner off, then flip it over. be patient. let it sit for three minutes. it gets fluffy and drier. grandsons will only eat my omelettes

You put oil in a pan, enough to cover the bottom of a pan. Then depending on what you like ( I use salsa and cheese). You cook on med heat wait for pan to heat up then in a bowl mix 3 eggs together and pour them into pan, cook eggs till almost all the way cooked then flip over and add Cheese and salsa and flip over into half moon shape. and it will heat up Cheese and Salsa. then put on plate and eat.

break your egss (two or three will do) in a bowl, add a bit of milk and stir. Then progressively add whatever you want: for example for a western omelette, you might want to add some green peas, some mushroom, some pre-cooked bacon, pieces of ham...whatever. Your choice, your taste. Mix, heat in the pan and prepare to serve.
