Beat the eggs (2 for everyone you are making it for), add a teaspoon of milk per egg, some salt, some pepper. When, already well beaten, prepare whatever you want to put in your omelette. If it's ham or mushrooms, saute them first. If it is cheese, then just cut them into cubes and add them to the beaten eggs. After sauteing the items that need to be cooked, let cool for at least 5 minutes.
In a flat frying pan, grease it with butter or light oil. Then, pour the beaten eggs, when the edges are already getting cooked, you add the ham, mushrooms, etc, on one side. And you just toss the other side to cover it. Let it cook for a while, then flip on the other side. When it already has its nice yellow cooked color, you can already serve it. :)

Big Fat Greek Omelet
INGREDIENTS:
1 cup halved grape tomatoes
1 teaspoon dried oregano, divided
1/2 teaspoon salt, divided
Black pepper, to taste
1/2 cup crumbled feta cheese (can use reduced-fat)
8 large eggs
1 (10 ounce) package chopped frozen spinach, thawed and squeezed dry
1 tablespoon olive oil

DIRECTIONS:
Heat a 12-inch non-stick skillet over low heat. (Use a 10-inch skillet if you halve the recipe to serve 2 instead of 4.) Meanwhile, in a small bowl, mix tomatoes, 1/2 tsp. oregano, 1/4 tsp. salt, and pepper to taste. Stir in feta.
In a medium bowl, whisk eggs together, then stir in spinach, 1/2 tsp. oregano, 1/4 tsp. salt, and pepper to taste. A few minutes before cooking omelet, add oil to the pan, and increase heat to medium-high. Heat until wisps of smoke start to rise from the pan. Add the egg mixture to the skillet. Using a plastic or wooden spatula to push back the eggs that have set, tilt the pan and let the uncooked egg mixture run onto the empty portion of the pan. Continue pushing back cooked eggs, tilting the pan and letting uncooked egg mixture flow onto the empty portion of the pan until omelet is moist but fully cooked, about 3 minutes. Reduce heat to low; pour the tomato mixture over half of the omelet. Using a slotted, flat spatula or turner, carefully fold the untopped half over the filling. Use the turner to slide the omelet onto a cutting board. Let stand a minute or two for the filling to warm.
Cut the omelet into 4 wedges and serve immediately.

Put on a pot of water to boil. Whip up three eggs and pour into a zip lock bag. Add grated cheese, ham, bell pepper or what ever else you want. Zip close and drop into boiling water. When eggs are set, pour onto your plate and enjoy.

Add some jalapeños, cream cheese, red bell pepers, mushrooms, onion and bacon.... top it with cilantro and wrap it on a flour tortilla.... Voila!! an Omellette Burrito!!!
Try it with an ice cold Corona with lemon.

Mushroom Omlette
200 g mushrooms
60 g unsalted butter
1 garlic clove, finely chopped
sea salt
black pepper
1 tablespoon finely chopped parsley
6 eggs, lightly beaten
slice or quarter mushrooms.
heat 25g butter add mushrooms and cook until not moisture in pan.
strain mushrooms returning any juices to pan and saute garlic for 30 seconds.
then add mushrooms and toss
season and add parsely.
keep warm.
whisk egg lightly and season.
in 26 cm pan heat all but 1 teaspoon remaining butter moderate heat until foaming.
tip in egg and tilt so covers pan.
drag cooked edges to center with wooden spoon and tilt pan to allow egg to run to edges.
spoon mushrooms into center give it 30 seconds.
push pan away from you causing omlette to start to flip and finish flip with spatula.
skim browned surface with last teaspoon butter and divide at table.

You can and just about anything to make an omelet try
onions, bell-peppers,deli meats,boiled potatoes,shrimp, cheese.
