I'm doing research on salmonella and I'd like to know what the actual odds of contracting salmonella from raw eggs are. I've eaten foods made from raw eggs all my life and never had a problem, so I'd like to know how much of this is pure hyperbole.

thanks,
Dan

Dan,
According to healingdaily.com

"A study by the U.S. Department of Agriculture in 2002 (Risk Analysis April 2002 22(2):203-18) indicates that only 2.3 million, out of the 69 billion eggs produced annually, are contaminated with salmonella.

So this really means that only 0.003 % of eggs are infected. Viewed another way, only 1 in every 30,000 eggs is contaminated with salmonella, which shows how uncommon this problem actually is.

Based on those numbers, the average person would come across a contaminated egg only once in 42 years."

Happy eating!

That would depend on a bunch of random conditions, such as the cleanliness of the egg, the cleanliness of the work area and people handling the eggs, the temperature at which the egg and resulting concoction are maintained...

The point is, Salmonella can make you very sick and can even kill you; why take that risk???

Commercially prepared eggs are washed and sanitized. It's POSSIBLE to get salmonella from them, but it is not likely. Salmonella is from contaminated shells, not the inside of the egg. That is normally sterile, unless the shell is cracked.

You're more likely to contract salmonella from the shells then the uncooked egg, so wash your hands after handling eggs, and be especially careful with uncooked eggs if shell matter comes into contact with them...

the actual figure s are somewhat contradicting, so quoting them is kinda messy. but raw eggs donot cause salmonella poisonong directly, its the shell which often falls into the preparation while preparing.

the shell os contaminated and causes poisoning
