A few interesting engineering projects I have heard of/ seen.

a) Mouse trap car, These are easy to build but there are alot of design considerations that can help/hinder the final performance. That and if you do it in competition against others it is eas to see whos is better.

b) catapult/ throwing device. I had a class where the project was for half the class to make catapults and the other half walls. Made for an interesting test of the best designs.

c) Simple mechanical computer. THis is basically taking gears and some numbered wheels and trying to get them to put togethor to do basic addition/multiplication or or even things like integrals

Engineering and design is less about the actual project than it is about the methodology used. The project is what makes doing the process fun.

Design and build a Sterling motor. You can use simple materials and they are fairly simple machines.
