King Edwards are the best type for roasties. Peel and cut the potatoes so that they are roughly the same size.Place in water with some salt added and bring to boil and simmer for 10 Minutes. Drain the water from the pot, replace lid and gently shake. This causes the spuds to flower. Once roasted, this gives the outside a nice crispy texture. Oven should be preheated to gas mark 6. Place some cooking oil in a roasting tray (or better still, Goose fat)and preheat for 5 minutes. Empty the spuds in and turn giving each potato a coating of oil. Roast in the middle of the oven for 25 minutes, turning after 15 minutes. I'm having some myself later, enjoy.

Everybody likes to roast potato's thier own way,but we part boil our potato's for about 5 to 10 mins till just cooked on the outside.drain off the water give them a quick shake in the pan this helps to make them crispy .Place them in a hot roasting tin and we find lard is better for roasting them as oil gives them an after taste.cook in the oven near the top on about 200 degrees until nice and brown,also if you are roasting a joint use the juices from the roasting meat as well as your lard or oil to give them an even nicer taste.Hope that helps you

Par boil potatoes for say 5 Min's. Then place into the roasting tin with the meat. (Which has been cooking already about half way through so the roasting tin is nice and hot and the meat juices are nearly spitting).
Top Tip
For a crisp finish Scrap a fork along the potatoes
Then season lightly with salt and pepper. Place back into oven for about 20-30 Min's.
You should get roasters that keep your guests coming back for more mmmmm!

For crispy roast spuds;
Pick a floury spud such as Maris Piper or King Edward, not a waxy red.
Peel and drop into boiling salted water, boil for 8 mins.
Meanwhile get a deep roasting dish and put a layer of sunflower oil in the bottom, heat at Gas 6.
Drain the spuds well, then add to the pan of hot fat - careful it will spit - and turn all the spuds over with a metal spoon to coat in the fat.
Roast at Gas 4 for up to an hour till crispy, turn at least once.

First of all, use decent potatoes. Skin them and boill in a pan of salted water for 3 -5 minutes. Drain and shake off all water (this will fluff them a little) Then sprinkle with a little salt and put them in a pre-heated roasting pan (about 190-210 degrees C) which has a suitable oil or fat in it (duck or goose fat is best, it makes them more crispy) Roast in the top of the oven for around 45 mins - 1hour. Give them a quick toss every 20 mins or so. Absolutely perfect!

Put your oil in the tray in a hot oven. I cut one onion into 1/4s and crush a couple of cloves of garlic and put that in the oil too (always use fresh oil for crispy potatos). Boil your potatos until they are almost mash consistency. Drain them well. Take your tray out of the oven and put it on the hopb with a couple of the burners turned on low to keep the oil hot, and pop the potatos in. Cook int he oven for about 45 mins of gas mark 6 in the top of the oven and baste them with the oil, or turn them over, every 15 mins or so.

Put a tray with a good ammount of oil in the oven and get as hot as possible.
Peel potatoes and cut as you want. Par boil them untill they are slightly soft on the outside(prob about 5 min, depends on size of potatoes)
Drain them and then give them a good shake in the saucepan to make them fluffy lookng.
Place them in tray of hot oil and sprinkle, mixed herbs or rosemary if desired. Put in oven cook until brown and crispy.

Boil the potatoes from cold, when they start to boil put timer for 15 minutes, but watch the last few minutes, you want them soft but not breaking.
Put into very hold oil/fat gently then spoon fat over them. Back in oven at about 200c for 20 mins, turn them over and cook for another 20mins, check and finish cooking to taste, longer of you want well done etc.

I prefer to cut them into same size pieces, lay them out on a cookie sheet, salt and pepper them, drizzle olive oil over them. Use your hands to move the potatoes all around until they are all coated in the olive oil.
Place them in a 400 degree oven for 35 minutes. Soft centers, crispy outsides and delicious. also works very well on all root vegetables which can be cooked with the potatoes or on their own. Carrots, parsnips, turnips, etc.
