Send an email confirming you received the package, and a simple thanks again. I wouldn't go overboard in this email. Something simple will be fine.

Thank you's should be hand written on nice heavy paper or card stock.

What did he have to do to send the documents? Did he have to go to the post office and spend money to over night or next day air them or did he just have to put them in an envelope and stick a stamp on it? If it was the former, I'd send him a TY note (mail him one telling him you received the documents and you appreciated his help). If it was the latter, you could get by with a simple "I got the documents. Thanks!" type email.

You should send a follow up email to let him the package arrived.

I don't think that saying thanks all the time will win his/her heart.
