Easy Pineapple Ice Cream
Reduce 4 cups of pineapple juice to a 1 cup measure (it should be the consistency of light syrup). Cool to room temperature and add 2 cups of unsweetened whipping cream. Sweeten the mixture to taste with sweetened condensed milk (or honey if you don't have this). Add 1 tsp Vanilla, chill overnight in the refrigerator and then freeze in your ice cream maker according to the manufacturers instructions.

Any of the recipes are good but if doing on the quick and cheap get a gallon Zip-lock freezer bag and fill half way with ice and salt will need a lot of salt. Put the ingredients from one of the other recipes into a quart size freezer bag. Close the quart bag put in the gallon bag and toss around between you and a buddy. None of the bags should be more than half full. The way I made it as a kid was in a small coffee can that had been taped shut put into a larger coffee can that had the ice and salt packed into it and my brother and I just rolled it back and forth on the floor. Now a days its hard to get the metal coffe cans; but now that I think about it they are out there. The thing about the bags is that you can feel and see how hard the ice cream has gotten. In fact I'm going to do that with my grand kids this week.

Custard base recipe
Ingredients:
4 egg yolks, 1/2 pint (250ml) milk, 1/2 pint (250ml) double/heavy cream, 4 oz (100g) sugar or caster sugar, 2 teaspoons vanilla extract (or according to taste - everyone's different!)
First of all scald the milk (bring slowly up to boiling point in a saucepan). Separately, mix together the egg yolks and sugar until thick. Pour into this the hot milk, whilst continuously stirring. Then pour the mixture back into the pan and heat gently, stirring until the custard thickens - DO NOT BRING TO THE BOIL OR IT WILL PROBABLY CURDLE. When you can see a film form over the back of your spoon it's time to remove the saucepan from the heat. Leave to cool.
This is the custard base and one you can use in many other recipes.
When the custard base is cold, stir in the cream and vanilla extract, then transfer the whole mixture into an ice cream maker and freeze according to the manufacturer's instructions.

Get an ice cream maker, Cuisinart makes great ones, they sell for around $250.00 at Williams-Sonoma, which although great quality, has a reputation for being a little pricey. The ice cream is soft and delicious. It's quite fluffy as well. I don't recommend the Pyrets brand, it tends to come out a little gooey. The ice cream maker will have all directions for making it included.

You can make the ice cream, add more sugar and it will be tastier. But I don't know to make the icecream softer. Maybe you could use some more milk? I think my answer will kinda help you, if it doesn't try another persons. Thats all I know about ice cream.
