Smushed avocadoes, mainly. It needs to be spiced to your liking. I've used onions, lemons, limes, garlic, pepper, salt, jalapenos, chilis, etc. Experiment until you figure out what you like.

This is how I make mine...
4 avacados, cut in half take out pit slice while inside of peel then take a spoon and spoon it out. It should be in thin strips. Then I take my chopper and chop it into small pieces, don't squish it.
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
6 green onions, chopped
1 jalapeno, chopped (if you want spicy leave the seeds in)
1 tsp. black pepper
1 tsp. salt
2 capfuls of lime juice or 1/2 of fresh lime squeezed
Mix together with spoon.
When it's chopped and not squished the apperance looks better (instead of looking like poo) and also you get the full flavor of all ingredients.

GUACAMOLE SPREAD

2 small or 1 large ripe avocado, peeled and seeded
2 tablespoons green onion, finely chopped
2 tablespoons drained, diced tomato
1 1/2 tablespoons canned green chiles, finely chopped
2 teaspoons lemon juice
1/2 teaspoon salt

Mash avocado with a fork, leaving some chunkiness for texture, if desired. Add the remaining ingredients; mix well. Makes about 1 cup

Good recipes and help! I mash my avacadoes and add salt, garlic powder, and onion powder. Like most people said, it really is a matter of taste. Quick tip- leave the pits in the bowl- it keeps the avacado from browning. Just make sure and let your guests know not to try to eat them- yes, it alarms people some times, but if they are eating guacamole, they will probably enjoy your explanation of why it is in there! A dash of lemon juice will also help, but some people don't like lemon.

Well, a super quick way of making guacamole is to cut, peel and mash your avocado and then add a jar of your favorite salsa.

Another quick way to make it, and my personal favorite, is to buy a guacamole seasoning package from the produce department and follow the directions. For me, the seasoning is perfect and I can control the consistency by adding the mayo and avocado amounts. Because I don't like fresh tomatoes in my guac, this is the best I've found!

Ripe avocados, mashed,(tip:when they are ripe they are slightly soft when squished gently, when they are rotten, there are bubbles beneath the skin), diced tomatoes, diced onions, minced cilantro, lemon or lime juice, and chiles if you want some spice, and salt.
If you want more of a spread, for tacos or burritos, mashed ripe avocados, cream(sour cream, milk, half and half, or heavy cream) lime or lemon juice, and garlic salt.
Add all together to taste. Mexican cooking is an art, not a science.

Here's a recipe I like.

3 avocados - peeled, pitted, and mashed
Juice from 1 lime
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper

Mash togetheravocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor.

All of the above answers are good. However, if you don't feel like experimenting with a completely homemade quac, then check out the produce dept. at Walmart. They've usually got different kinds of quick-mix packages for Guacamole and Salsa, among alother things, hanging on racks somewhere around there. There's one for mild and one for spicy. All you do is add smashed avacoados and it's very very good.

Add spices to your taste, and you're done, should take 10 minutes max.
