Decatopo's answer is funny (he said: give me some of that red stuff) and it also denotes some dialectal (Roman) influence. In any case, the word stays the same in Italian. The same applies for words like: mouse (computer equipment), computer (there is a word calcolatore, but is old-fashioned) and others. Other words like mayonnaise are lightly modified for alphabetical reasons (standard Italian does not have y), therefore we have maionese (one -n-).
Italian is a language that in most instances is very receptive toward foreign expressions, although there is a cultural institution that "dictates" which are to be used or whether there is an Italian equivalent to a foreign word: I am referring to L'Accademia della Crusca and you may check more information on http://www.accademiadellacrusca.it/ Unfortunately the English version of the site is still under construction.

You don't say ketchup in Italian, it doesn't exist, but you can say "pasta de pomodoro", which is kind of a "tomato paste"

they probably wouldn't say it, or just say it ketchup. Europeans disdain ketchup, especially Spanish and French Europeans.
