Its a figure of speech that kind of pokes fun that people who don't take risks and follow the rules die young anyway so it didn't do them any good. I know I worried about that phrase too when I was little.

The error is that 'only' the good die young.

if someone dies young, he or she is good.

That doesnt measn everyone who is good dies young.
