Carrots and tomatoes. My parents used to add some cucumber and green onions, too. Plus some ground black pepper and a dash of salt.
I've also heard people using diced pepperocinis too for a little kick.

Instead of the normal, try an old Arabic recipe.
1 large can garbanzo beans, drained
1 can cannellini beans, drained and rinsed
1 can vacuum packed corn (no liquid)
1 chopped/seeded cucumber
3/4 cup chopped green onion
1 cup chopped parsley (or cilantro)
3/4 cup chopped olives
6 ounce can drained tuna (I prefer chunk white)
Dressing:
1 cup plain yogurt
3/4 cup tahini
1/4 cup mayo or sour cream
zest of 1 lime
8-10 cloves garlic, minced
Salt and pepper to taste
1 T pepper flakes
2 tsp curry
Mix together all of the veggies, but save the tuna til last.
Then mix together the yogurt with the mayo or sour cream and all of the seasonings, then stir in the tahini. As soon as you add the tahini it will seize up and act like peanut butter. Mix into the veggies. Add the tuna, stirring gently so it stays in big chunks.
This makes A LOT. You can adjust the seasonings after it's refrigerated for several hours. Personally, I love adding chopped ginger to it, but that's not in the original recipe. You can add in most any fresh veggies that won't get soggy. It's also extremely addictive and is almost impossible to put down.

How about Curry Tuna Salad courtesy of The Food Network?
Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads
In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
Yield: 3 to 4

My famous Tuna Salad Recipe:
1Can Albacore Tuna(drained)
2TBS mayo
1TBS. Mayo w/Wasbi
Fresh Celery, BellPeper, Onion ~ as little or as much as you like. I luv veggies so use alot.
Pinch of Salt, 2 big dashes of Spice Hunter's Chef Shake
Mix well ~ chill..yummy

Like tuna fish salad with a little pickle juice thrown in for flavor... also like to crush potatot chips on top of sandwhich with tuna for some crunch

I personally don't do tuna, but you can add onions, try zesty french dressing along with the mayo. If you like a little hard boiled egg. peppers.

My mom always used to put pecans and grapes, though I hated that. Really anything except the tuna, mayo, and spices just gets in the way.

pepper & spices, onions, lettuce, go 2 a hispanic store and get tostadas and break them into small pieces to dip into it (or use tortilla chips) also maybe some types of salsa.
